Asparagus and Egg Scramble

  • 2 organic eggs
  • 1/3 bunch chopped asparagus with bottom stems removed
  • 1/2 teaspoon Seasoning (recipe below)
  • 1 tablespoon extra-virgin olive oil

Seasoning

  • 1/4 teaspoon black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tbsp oregano
  • 1 tbsp parsley flakes
  • salt substitute optional

Instructions

Directions:

  1. Scramble eggs in a bowl and set aside.
  2. Add 1/2 tablespoon olive oil to skillet.
  3. Add asparagus and half the seasonings.
  4. Cook for 4 to 5 minutes, until asparagus is tender, stirring constantly.
  5. Add remaining olive oil
  6. Then add scrambled eggs and the remaining seasonings.
  7. Stir continuously for about 2 to 3 minutes or until eggs are done.
  8. Serve immediately.
